These fields have been plowed and are ready to be flooded.  Mountain water is collected using dams and then distributed orderly to the fields.  As you can see the fields are staggered and water is delivered to the top field first.  Once it is full the next field is filled.  In case of over filling, water goes to the field below so very little water is wasted in this process.
